Low-Fat Dinners Under 400 Calories: 8 Filling Recipes

Cutting calories at dinner usually goes one of two ways: a plate that leaves you opening the fridge again by 9pm, or a plate that actually holds you until morning. The difference is almost never willpower — it is protein, fiber, and volume.

The eight dinners below all land under 400 calories per serving and stay low in fat too, but none of them are built around “less.” Lean protein, vegetables, and a modest amount of a starchy side do the filling, so the calorie count comes down without the portion looking sad.

What keeps these dinners satisfying at a lower calorie count

A few principles repeat across all eight recipes:

  • A generous portion of lean protein — chicken, turkey, shrimp, tuna, or beans — so the meal still feels like a real dinner.
  • Vegetables doing double duty as both bulk and flavor, often standing in for part of a starch (zucchini noodles, cauliflower, extra greens).
  • A modest, measured portion of a whole grain or starchy vegetable rather than an unlimited pile of it.
  • Bright, assertive flavors — citrus, herbs, garlic, spice — so a smaller plate doesn’t taste like a smaller plate.

Baked Lemon Cod with Steamed Broccoli and Quinoa

Ingredients

  • 4 cod fillets (about 150 g each)
  • 1 lemon, sliced, 2 garlic cloves, minced, 1 teaspoon dried dill
  • 4 cups broccoli florets
  • 1 cup dry quinoa, cooked according to package directions
  • 1 teaspoon olive oil, salt and pepper

Method

  1. Preheat the oven to 200°C (400°F).
  2. Place the cod on a lined tray, season with garlic, dill, salt, and pepper, and top with lemon slices.
  3. Bake 15–18 minutes, until the fish flakes easily.
  4. Steam the broccoli 5–6 minutes, until bright green and just tender.
  5. Serve the cod over quinoa with the broccoli alongside, drizzled with the oil.

Turkey Lettuce Wraps with Ginger-Hoisin Sauce

Ingredients

  • 500 g lean ground turkey breast
  • 1 head butter or iceberg lettuce, leaves separated
  • 1 carrot, grated, ½ cup diced water chestnuts (optional)
  • 3 tablespoons hoisin sauce, 1 tablespoon low-sodium soy sauce
  • 1 tablespoon grated ginger, 2 garlic cloves, minced, 1 teaspoon sesame oil
  • 2 green onions, sliced

Method

  1. Cook the turkey in a nonstick pan over medium heat until no longer pink, breaking it up as it cooks.
  2. Add the ginger and garlic and cook 1 minute.
  3. Stir in the hoisin, soy sauce, and sesame oil; cook 2 more minutes.
  4. Stir in the carrot and water chestnuts, if using.
  5. Spoon into lettuce leaves and top with green onions.

Zucchini Noodle Bolognese with Lean Turkey

Ingredients

  • 4 zucchini, spiralized into noodles (or 4 cups store-bought)
  • 500 g lean ground turkey breast

  • 1 teaspoon dried oregano, 1 teaspoon dried basil
  • 2 tablespoons grated Parmesan to finish

Method

  1. Cook the turkey with the onion, garlic, and carrot in a large pan until the turkey is no longer pink.
  2. Stir in the crushed tomatoes, oregano, and basil; simmer 15–20 minutes.
  3. Meanwhile, sauté the zucchini noodles in a dry pan 2–3 minutes, just until warmed through (they release water quickly, so do not overcook).
  4. Top the noodles with the sauce and finish with Parmesan.

Sheet-Pan Shrimp and Asparagus with Lemon and Garlic

Ingredients

  • 500 g raw shrimp, peeled and deveined
  • 2 bunches asparagus, trimmed
  • 3 garlic cloves, minced, zest and juice of 1 lemon

  • Cooked brown rice or a small whole-grain roll to serve (not counted in calories above)

Method

  1. Preheat the oven to 220°C (425°F).
  2. Toss the asparagus with half the oil, salt, and pepper on a sheet pan; roast 6 minutes.
  3. Toss the shrimp with the remaining oil, garlic, and lemon zest.
  4. Add the shrimp to the pan and roast 6–7 more minutes, until pink and the asparagus is tender.
  5. Finish with lemon juice before serving.

Stuffed Bell Peppers with Turkey and Rice

Fat per serving 4.4 g · 380 kcal · Serves 4 · Prep 15 min · Cook 40 min

Ingredients

  • 4 large bell peppers, tops cut off and seeded
  • 400 g lean ground turkey breast
  • 1 cup cooked rice, 1 onion, diced, 2 garlic cloves, minced
  • 1 cup crushed tomatoes, 1 teaspoon cumin, 1 teaspoon paprika
  • ⅓ cup shredded reduced-fat cheese (optional)

Method

  1. Preheat the oven to 190°C (375°F).
  2. Cook the turkey with the onion and garlic until no longer pink.
  3. Stir in the rice, half the crushed tomatoes, cumin, and paprika.
  4. Spoon the filling into the peppers and place upright in a baking dish; top with the remaining crushed tomatoes.
  5. Cover with foil and bake 30 minutes; uncover, top with cheese if using, and bake 10 more minutes.

Grilled Chicken and Vegetable Kebabs with Tzatziki

Ingredients

  • 500 g chicken breast, cubed

  2. Thread the chicken and vegetables onto skewers.
  3. Grill or broil, turning occasionally, 10–12 minutes until the chicken is cooked through.
  4. Stir together the yogurt, cucumber, garlic, dill, and lemon for the tzatziki.
  5. Serve the skewers with the tzatziki on the side.

Black Bean and Sweet Potato Bowl with Lime Crema

  3. Warm the black beans and corn together in a small pot.
  4. Whisk the yogurt, lime juice, and salt for the crema.
  5. Divide the sweet potatoes, beans, and corn between bowls; top with the lime crema and cilantro.

Seared Tuna Steak with Cucumber-Avocado Salad

Ingredients

  • 4 tuna steaks (about 120 g each)
  • 1 teaspoon olive oil, salt, pepper, sesame seeds (optional)
  • 1 cucumber, diced, 1 avocado, diced (about ¼ per serving)
  • ½ red onion, thinly sliced, 2 tablespoons chopped cilantro
  • Juice of 1 lime, 1 teaspoon rice vinegar

Method

  1. Season the tuna with salt and pepper, and sesame seeds if using.
  2. Sear in a hot pan with the oil, about 90 seconds per side for rare to medium-rare (longer if you prefer it more cooked through).
  3. Toss the cucumber, avocado, onion, and cilantro with lime juice and rice vinegar.
  4. Slice the tuna and serve over the salad.
